How many times have you gone to fry a pan full of eggs for breakfast only to wind up having them scrambled? The secret to perfectly fried eggs that stay intact is simple: don't flip them! I know what you're thinking..... how in the world can you fry an egg without flipping it? I have used a method for years that I consider the best way to fry egg using just a little bit of water. Yes, water.
To do this, you need to cook your eggs in a pan that has a lid. I'm quite fond of my cast-iron skillet, so I just use a baking sheet set on top of it in place of a lid. I only cook my eggs in pure butter. Sorry, I'm from the South, and that is the only way to fry an egg. So, you want to go ahead and put your butter in the pan while it's heating, and wait until it is melted. I heat my butter over medium heat, then add my eggs one at a time. When the eggs have cooked to the point that you would normally flip them, add a few tablespoons of water to the hot pan and immediately cover it. This creates steam in the pan, and will cook the top of your eggs very nicely without having to flip them. The pan only needs to be covered for about a minute, so keep a close eye on the eggs to check for doneness. I like this method much better than actually spooning hot melted butter over the tops to cook them, as you can use less butter this way and they all cook rather evenly.
