Easy Zucchini Pizza Bites

If you're like me, you'll agree on two things: you grow way too much zucchini in the summer, and your kids love pizza. With this zucchini pizza bites recipe, you can use up some of that extra zucchini, and squash (see what I did there?) those pizza cravings! This recipe uses pepperoni as the only topping aside from cheese, but that's just what my kids eat. You can use any topping(s) you like! I have even tried this recipe with yellow summer squash, and it was just as good as the zucchini. Anyway, keep reading below the recipe for a few tips.
Easy Zucchini Pizza Bites

Easy Zucchini Pizza Bites

A healthier alternative to the beloved favorite.

Ingredients

  • 2 large zucchini 
  • 1/2 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1/2 cup pepperoni slices, chopped

Instructions

  1. Preheat oven to 450°, and placed a silicone baking mat, or parchment paper, on a large baking sheet.
  2. Slice zucchini into 1/4 inch thick slices, and place on baking sheet.
  3. Top with the pizza sauce, cheese, and pepperoni. 
  4. Bake for 5 to 7 minutes, until the zucchini is tender.
  5. Turn oven to broil, and broil until cheese is melted.

Because these little zucchini pizza bites can stick to a normal baking sheet, I strongly suggest using either a silicone baking mat or parchment paper to line your baking sheet.

On a side note, one of my followers suggested using sliced eggplant in place of the zucchini. I haven't tried it yet, but it sounds good!
