With this zucchini pizza bites recipe, you can use up some of that extra zucchini, and squash (see what I did there?) those pizza cravings! This recipe uses pepperoni as the only topping aside from cheese, but that's just what my kids eat. You can use any topping(s) you like! Because these little zucchini pizza bites can stick to a normal baking sheet, I strongly suggest using either a silicone baking mat or parchment paper to line your baking sheet.
On a side note, one of my followers suggested using sliced eggplant in place of the zucchini. I haven't tried it yet, but it sounds good!
